“Make yourself at home” I was told as I walked into a very active brewery. I had arrived at Holy City Brewing for an interview with Chris Brown. He was elbow deep in the canning line, making sure fresh Washout Wheat was ready for sale. I grabbed a Pluff Mud Porter and we started chatting.
The winter of 2009 was tough on Joel Carl and Sean Nemitz’s Charleston rickshaw business… so during some downtime they started home brewing. Add in Mac Minaudo and you have the makings of a business, throw in a dash of Chris Brown and you have a brewery. Holy City Brewing opened their doors in 2011 and has been a trailblazer in the Charleston craft beer scene from the get go. Holy City’s full story can be found here.
As the brewery has grown, Sean Guidera (Head Brewer) and Jack Pitts (Assistant Brewer) have taken over the daily brewing, allowing Chris to move into move of a production manager role. I asked Chris how they decided on what to brew “next”. He said ” Sometimes I have an idea in my
head for a beer I really want to try. Sometimes just talking with the other guys in the brewery we come up with something we want to try. We try and brew new stuff almost every week. Keeping the tap room full and interesting.”
“I like to brew simple and to style.” Chris told me. “But I also like to experiment with new flavors. I learned a while ago, never say never. I never wanted to brew with fruit but we have, I have never wanted to do sours, but now we have a little sour program. No matter what we brew I like to get the most out of a beer with the simplest recipe.”
I asked Chris how adding live music, yoga, and other entertainment has changed the brewery. Beth Cosi teaches her Bendy Brewski Yoga class on Sunday mornings with awesome brunch food available after getting your yoga on. “We have a ton of moving parts now.”” We have a GM for the tap room, Josh Pike, who is amazing. He runs all the tap room extras so that I can focus, for the most part, on the beer.” On a personal note, Josh has always gone out of his way to greet me when I walk in the door. Paul Pavlich, who also formerly worked at Charleston Rickshaw, helps out with managing the taproom and the growing social media presence.
The Holy City staff says the key to helping a customer pick the right beer, is to just listen. “We can figure out a beer with very little info.”

With people like Zach, Paul, and Karen serving up fresh brews daily, it seems they are doing a great job listening.
